- Heat the oil in a Dutch oven over medium heat. Add the onion and cook for 5 to 6 minutes until softened and lightly golden.
- Add garlic and ginger. Cook for 30 to 60 seconds until fragrant, stirring constantly to prevent burning.
- Add the chopped tomato, cumin, coriander, garam masala, turmeric, chili powder, and salt. Cook for 4 to 5 minutes until the tomatoes soften and the spices bloom.
- Transfer the cooked tomato mixture to a blender if you want a smooth sauce. Blend carefully until mostly smooth, then return it to the pot.
