Ingredients

Blueberry Filling
  • 3 cups blueberries fresh or frozen
  • 0.5 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp water for slurry
  • 1 tbsp lemon juice fresh

Equipment

  • Mixing Bowl
  • Saucepan
  • Whisk
  • Spatula
  • Measuring Cups
  • Freezer
  • Tray
  • Fine Mesh Strainer
  • Storage Container
  • Oven

Method

  1. Combine blueberries, sugar, and lemon juice in a saucepan.
  2. Cook over medium heat until the berries begin releasing juices.
  3. Whisk cornstarch and water together until completely smooth.
  4. Pour the slurry into the berry mixture while stirring constantly.
  5. Cook until the filling thickens and develops a glossy texture.
  6. Cool completely before spreading between cake layers or desserts.
  7. Chill for easier assembly and a thicker, more stable consistency.

Notes

For a softer filling, reduce cooking time slightly. For a thicker texture, cook a little longer after adding the slurry. Freeze cooled filling in airtight containers for up to three months and thaw overnight in the refrigerator. Chill before assembly to prevent sliding layers. Customize flavor with vanilla, cinnamon, lemon zest, or mixed berries. Store covered in the refrigerator for up to one week.
