- Cut the cauliflower into evenly sized bite-size florets. Pat them dry so the coating adheres and the edges roast instead of steam.
- Whisk flour, water, salt, garlic powder, smoked paprika, and black pepper in a mixing bowl until you form a smooth, thick batter.
- Add the cauliflower florets and toss gently until each piece receives a thin, even coating. Shake off excess batter before arranging them.
- Place the coated florets in a single layer on the baking sheet. Leave space between pieces so the hot air can crisp the edges.
- Bake for 20 minutes, then flip the florets. Continue baking for 8 to 10 minutes until the coating becomes golden and crisp.
- Whisk buffalo sauce, melted butter, honey, and garlic powder in a small bowl. The sauce should look smooth, glossy, and pourable.
- Transfer the hot cauliflower to a clean mixing bowl. Pour the buffalo sauce over the florets and toss gently until evenly coated.
- Return the sauced cauliflower to the baking sheet. Bake for 3 to 5 minutes to help the sauce cling while keeping the edges crisp.
- Rest for 2 minutes, then transfer to a serving bowl. Garnish with parsley if desired and serve immediately with ranch and celery sticks.
Notes
For crispier cauliflower, dry the florets thoroughly, keep the pieces separated, and avoid drowning them in sauce. For softer cauliflower, coat generously and bake a few extra minutes after saucing. Sauce the florets only after the initial roasting so the coating stays crisp. Handle the hot pieces gently during assembly to prevent the crust from breaking. Adjust the heat by choosing mild or hot buffalo sauce, adding cayenne, or mixing in extra honey for balance. Add smoked paprika, ranch seasoning, Parmesan, blue cheese, or fresh herbs for flavor variations. Prepare the cauliflower and batter separately up to several hours ahead, but coat and bake close to serving. You can freeze the plain baked cauliflower for up to 2 months, then reheat it in a hot oven or air fryer before adding fresh buffalo sauce. Freezing the fully sauced cauliflower can soften the coating. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven or air fryer to restore some crispness.
