- Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly grease the surface.
- Trim the cauliflower leaves, keeping the core attached. Slice the head into 3 to 4 steaks about 2.5 cm thick.
- Place the steaks on the baking sheet. Brush both sides with olive oil, handling them gently so the thick slices stay intact.
- Mix garlic, smoked paprika, garlic powder, salt, black pepper, and red pepper flakes in a small bowl. Rub the seasoning evenly over both sides.
- Roast for 15 minutes. Carefully flip each steak with a spatula, then roast for another 10 to 12 minutes until the edges become deeply golden and crisp.
- Sprinkle Parmesan over the tops and return the tray to the oven for 2 to 3 minutes, until the cheese melts and lightly browns.
- Remove the steaks and let them rest for 3 minutes. The centers should feel tender while the outer edges remain caramelized and firm.
- Drizzle with lemon juice and optional olive oil. Finish with parsley and lemon zest, then transfer the steaks carefully to a serving platter.
- Serve warm as a vegetarian main dish or side. Add a grain, salad, yogurt sauce, or your favorite dip for a complete meal.
Notes
Keep the cauliflower core intact when slicing so the steaks hold together during roasting and handling. For crispier edges, use thick slices, dry the cauliflower thoroughly, avoid crowding the tray, and roast until deeply browned. For softer steaks, slice slightly thicker and reduce the final roasting time. Handle the cooked steaks with a wide spatula because the centers soften as they roast. Customize the flavor with cumin, curry powder, Italian herbs, chili flakes, tahini, cheddar, or a squeeze of extra lemon. Assemble the raw steaks on the tray just before roasting for the best browning. You can season them several hours ahead and refrigerate them covered. Freeze cooked steaks only if necessary; wrap them individually and freeze for up to 2 months, knowing the texture will soften after thawing. Reheat in a hot oven or air fryer to restore some crispness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
