Ingredients
  

Cowboy Caviar
  • 1 can (425 g) black beans — drained and rinsed
  • 1 can (425 g) black-eyed peas — drained and rinsed
  • 1 1/2 cups (225 g) corn kernels — fresh, canned, or thawed
  • 1 1/2 cups (225 g) cherry tomatoes — quartered
  • 1/2 cup (75 g) red bell pepper — diced
  • 1/2 cup (75 g) red onion — finely diced
  • 1 jalapeño (15 g) — seeded and finely chopped
  • 1 avocado (150 g) — diced just before serving
  • 1/4 cup (15 g) fresh cilantro — chopped
Lime Dressing
  • 1/4 cup (60 ml) olive oil
  • 3 tablespoons (45 ml) fresh lime juice
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon (7 g) honey
  • 1/2 teaspoon (1.5 g) ground cumin
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (0.5 g) black pepper

Method
 

  1. Drain and rinse the black beans and black-eyed peas thoroughly. Shake off excess water so the finished caviar stays chunky rather than watery.
  2. Combine beans, corn, tomatoes, bell pepper, red onion, jalapeño, and cilantro in a large mixing bowl. Toss gently to preserve the vegetables' shape.
  3. Whisk olive oil, lime juice, apple cider vinegar, honey, cumin, salt, and black pepper in a small bowl until the dressing looks smooth.
  4. Pour the dressing over the bean mixture. Fold gently until every ingredient receives a light, even coating.
  5. Cover and refrigerate for at least 30 minutes. This resting time lets the flavors mingle while keeping the vegetables pleasantly crisp.
  6. Dice the avocado shortly before serving and fold it in gently. Avoid aggressive stirring because ripe avocado can quickly turn into guacamole.
  7. Taste and adjust the lime juice, salt, or jalapeño. Serve chilled with tortilla chips, or spoon the mixture over tacos, grilled chicken, or salads.

Notes

For the best texture, drain canned ingredients thoroughly and avoid overmixing. Keep the vegetables crisp by chilling the mixture instead of leaving it at room temperature. Add avocado immediately before serving to prevent browning and maintain clean cubes. For more heat, keep some jalapeño seeds or add hot sauce. For a milder version, omit the jalapeño and use extra bell pepper. Add mango, cucumber, black olives, or a little feta for flavor variations. Prepare the bean and vegetable mixture up to 2 days ahead, but store avocado separately and add it before serving. Refrigerate leftovers in an airtight container and use within 2 days. Do not freeze, as the vegetables and avocado will lose their fresh texture.
