  • 6 (180 g) small flour tortillas — about 6-inch size
  • 1 tablespoon (15 ml) olive oil — for brushing
  • 1/2 teaspoon (3 g) salt
Spiced Beef Filling
  • 1 pound (450 g) lean ground beef
  • 1 tablespoon (15 ml) olive oil
  • 1/2 cup (75 g) yellow onion — finely diced
  • 2 cloves (6 g) garlic — minced
  • 1 teaspoon (3 g) chili powder
  • 1 teaspoon (2 g) ground cumin
  • 1/2 teaspoon (1.5 g) smoked paprika
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (0.5 g) black pepper
  • 1/4 cup (60 ml) water
Cheese and Toppings
  • 1 1/2 cups (150 g) shredded mozzarella cheese
  • 1/2 cup (75 g) tomatoes — finely diced
  • 1/2 cup (50 g) lettuce — finely shredded
  • 1/4 cup (40 g) red onion — finely diced
  • 1/4 cup (60 g) sour cream
  • 1/4 cup (60 g) salsa
  • 1 jalapeño (15 g) — thinly sliced, optional
  • 2 tablespoons (8 g) fresh cilantro — chopped
  • 1 lime (70 g) — cut into wedges

Method
 

  1. Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper. Warm the tortillas briefly so they become flexible and easier to shape.
  2. Roll each tortilla tightly into a cone, slightly overlapping the edges. Secure the seam with a toothpick and place the cones seam-side down on the baking sheet.
  3. Brush the outside of each tortilla cone lightly with olive oil and sprinkle with salt. Keep the openings wide enough for filling later.
  4. Bake the tortilla cones for 10 to 12 minutes, turning once halfway through, until crisp, lightly golden, and firm. Let them cool slightly before handling.
  5. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the onion and cook for 2 to 3 minutes until softened.
  6. Add the garlic and ground beef. Break the beef apart with a wooden spoon and cook for 5 to 7 minutes until browned and fully cooked.
  7. Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Add water and simmer for 2 minutes until the beef stays juicy but no longer looks wet.
  8. Remove the skillet from the heat and let the beef rest for 3 to 5 minutes. This helps the juices settle before assembly.
  9. Remove the toothpicks carefully from the warm cones. Spoon the beef mixture into each cone, filling it generously without compressing the tortilla.
  10. Place the filled cones back on the baking sheet. Top each with shredded mozzarella, keeping the cheese near the beef so it melts evenly.
  11. Return the cones to the oven for 3 to 5 minutes, until the mozzarella melts and becomes glossy. Broil for 1 minute for light browning if desired.
  12. Rest the cones for 2 minutes. Add lettuce, tomatoes, red onion, salsa, sour cream, jalapeño, and cilantro just before serving.
  13. Serve upright on a platter with lime wedges. Handle the cones gently because the crisp shells can crack when overfilled or squeezed.

Notes

For the crispiest tortilla cones, warm the tortillas before shaping and bake them until firm and golden. For a softer shell, reduce the first bake by 2 to 3 minutes. Keep the beef juicy but drain excess liquid before assembly so the cones do not become soggy. Let cooked beef cool briefly before filling to reduce steam inside the shells. Handle the baked cones gently because thin edges can crack. Assemble cheese immediately before the final bake, then add fresh toppings after baking to preserve crunch. Customize the beef with oregano, coriander, chipotle, cayenne, taco seasoning, or a little lime zest. Add black beans, corn, avocado, pickled jalapeños, guacamole, or different cheeses for variations. For make-ahead preparation, cook the beef up to 2 days ahead and refrigerate separately from the tortilla cones. Reheat the beef before filling. Do not freeze assembled cones because the tortillas become soft after thawing. Freeze cooked beef filling in an airtight container for up to 2 months, thaw overnight, and reheat gently.
