Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Whisk flour, cream of tartar, baking soda, and salt together until evenly mixed.
  3. Beat butter and sugar until fluffy with a light creamy texture.
  4. Add egg and vanilla extract. Mix until smooth and fully combined.
  5. Fold dry ingredients into the wet mixture until a soft dough forms.
  6. Mix cinnamon and sugar in a small bowl until evenly blended.
  7. Scoop dough balls and roll each one through the cinnamon sugar coating.
  8. Arrange cookies on the baking sheet, leaving space for spreading while baking.
  9. Bake for 10 to 12 minutes until edges look set and centers stay soft.
  10. Cool cookies on the tray briefly before transferring them to a cooling rack.

Notes

For softer cookies, remove them when centers still look slightly underbaked. Bake longer for crispier texture. Freeze dough balls before baking for quick future treats.
