- Preheat the oven to 190°C (375°F) if you plan to bake the dish. Lightly grease a baking dish.

- Drain the cauliflower thoroughly and let it steam-dry for several minutes. Removing excess water keeps the cheese sauce thick and creamy.
- Blend the cauliflower, almond milk, butter, cream cheese, garlic powder, salt, and pepper until completely smooth. Work in batches if needed.
- Pour the cauliflower sauce into a medium saucepan and warm it over low heat. Stir gently until steaming but do not boil.
- Add cheddar, Monterey Jack, Parmesan, and Dijon mustard gradually. Stir continuously until the cheeses melt into a smooth, glossy sauce.
- Taste the sauce and adjust salt, pepper, or mustard. The mixture should coat a spoon and remain thick enough to cling to the cauliflower.
- For stovetop serving, transfer the finished mixture to a bowl and add bacon, chives, or smoked paprika. Serve while hot and creamy.
- For a baked finish, transfer the mixture to the prepared baking dish. Sprinkle extra cheddar and optional bacon over the top.
- Bake for 10 to 12 minutes until bubbling around the edges and lightly golden on top. Broil briefly for deeper browning if desired.
- Rest the baked dish for 5 minutes before serving. The sauce should remain creamy while the top develops a lightly crisp, cheesy layer.

For the creamiest keto cauliflower mac and cheese, cook the cauliflower until very soft and drain it thoroughly before blending. For a softer, looser texture, add warm almond milk 1 tablespoon at a time. For a thicker, more scoopable texture, simmer the sauce briefly before adding the cheese. Avoid high heat after adding cheese because the sauce can become grainy. Handle the hot blender contents carefully and vent the lid according to your blender's instructions. Customize with bacon, jalapeño, smoked paprika, roasted garlic, chili flakes, broccoli, or different cheeses. Add crunchy toppings only during final assembly so they stay crisp. Prepare the cauliflower sauce up to 24 hours ahead and refrigerate it separately, then combine and reheat gently before serving. Freeze cooled portions for up to 2 months, although the sauce may separate slightly after thawing. Thaw overnight and reheat slowly while stirring. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of milk if needed.
