Ingredients
  

Cauliflower
  • 2 large heads (1.4 kg) cauliflower — cut into medium florets
  • 4 cloves (12 g) garlic — peeled
Creamy Mixture
  • 3 tablespoons (42 g) unsalted butter
  • 3 ounces (85 g) cream cheese — softened
  • 1/3 cup (80 ml) heavy cream — warmed
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (0.5 g) black pepper
  • 1/4 teaspoon (0.5 g) ground nutmeg
  • 1 teaspoon (5 ml) fresh lemon juice
Optional Finish
  • 1 tablespoon (4 g) fresh chives — chopped
  • 1 tablespoon (4 g) fresh parsley — chopped
  • 1/4 teaspoon (0.5 g) smoked paprika — optional
  • 1 tablespoon (15 g) butter — for serving, optional

Method
 

  1. Bring a large pot of water to a simmer and place a steamer basket inside. Add the cauliflower and garlic cloves.
  2. Cover and steam for 10 to 12 minutes, until the cauliflower becomes very tender and easily breaks apart with a fork.
  3. Transfer the cooked cauliflower to a colander and let it drain for several minutes. Press gently to release excess moisture without crushing the florets completely.
  4. Warm the butter and heavy cream in a small saucepan over low heat. Keep the mixture warm and never let it boil.
  5. Place the drained cauliflower and garlic in a food processor. Add cream cheese, warm butter mixture, Parmesan, salt, pepper, nutmeg, and lemon juice.
  6. Pulse until smooth and creamy, scraping the sides as needed. Stop when the mixture looks silky and thick rather than loose or watery.
  7. Add a little extra warm cream if needed for softness, 1 tablespoon at a time. Avoid adding too much liquid, or the mash may become runny.
  8. Taste and adjust salt, pepper, lemon, or nutmeg. Fold in chives, parsley, or smoked paprika if using.
  9. Transfer the mash to a serving bowl. Smooth the top gently and add a small pat of butter, extra Parmesan, or fresh herbs.
  10. Serve immediately while warm and creamy. Pair it with roasted meats, grilled vegetables, curries, or any meal needing a rich low-carb side.

Notes

For silky keto mashed cauliflower, steam rather than boil the florets and drain them thoroughly. Excess water is the biggest cause of loose mash. For a softer texture, add warm cream gradually. For a thicker, more potato-like texture, use less cream and pulse carefully. For an even smoother finish, process a little longer; for rustic mash, pulse briefly and leave small pieces. Handle the hot cauliflower carefully during processing and avoid overfilling the food processor. Customize with roasted garlic, cheddar, blue cheese, cream cheese, thyme, rosemary, chives, smoked paprika, chili flakes, or a drizzle of olive oil. Add toppings immediately before serving for the best texture. Prepare the mash up to 2 days ahead and refrigerate in an airtight container. Reheat gently over low heat with a splash of cream, stirring often. Freeze cooled portions for up to 1 month, although slight graininess may appear after thawing. Thaw overnight in the refrigerator and reheat gently. Store leftovers refrigerated for up to 3 days.
