Method
 

  1. Combine 1 ½ cups crumbs, melted butter, and sugar.
  2. Press mixture firmly into 8x8-inch dish evenly.
  3. Refrigerate crust for 20 minutes to firm up.
  4. Beat 8 oz cream cheese until smooth.
  5. Add powdered sugar and mix until creamy.
  6. Blend in lemon juice, zest, and vanilla extract.
  7. In separate bowl, whip 1 cup heavy cream to stiff peaks.
  8. Fold whipped cream gently into lemon mixture.
  9. Spread filling evenly over chilled crust.
  10. Top with 1 cup whipped topping smoothly.
  11. Chill at least 4 hours until fully set.
  12. Garnish with extra zest before slicing.
