- Melt the butter with olive oil in a large Dutch oven over medium-low heat. Add the sliced onions and salt, then stir to coat evenly.
- Cook the onions for 20 to 25 minutes, stirring every few minutes, until deeply golden, soft, and caramelized. Add sugar only if needed to encourage browning.
- Stir in Worcestershire sauce and fresh thyme. Cook for 1 minute so the onions absorb the savory flavor and become glossy.
- Add minced garlic and cook for 30 seconds until fragrant. Keep the heat low so the garlic does not burn.
- Pour in the broth and heavy cream. Add dried thyme and black pepper, then bring the liquid to a gentle simmer.
- Add the dry pasta and stir thoroughly. Keep most of the pasta submerged so it cooks evenly in the creamy broth.
- Cook uncovered for 10 to 12 minutes, stirring every few minutes, until the noodles become tender but still slightly firm.
- Lower the heat and gradually stir in Gruyere and Parmesan. Continue stirring until the cheese melts into a smooth, glossy sauce.
- Check the consistency. Add warm broth for a looser sauce, or simmer gently for another minute if you want a thicker, clingier finish.
- Stir in lemon juice and red pepper flakes if using. Taste and adjust salt, pepper, or Worcestershire sauce.
- For extra cheesy assembly, transfer the pasta to an oven-safe dish, top with extra Gruyere, and broil for 1 to 2 minutes until bubbling and golden.
- Rest the pasta for 3 to 5 minutes. Garnish with parsley and serve warm while the sauce remains creamy and the onions stay tender.
Notes
Caramelizing the onions slowly creates the deepest flavor, so avoid rushing this stage. For a softer, silkier sauce, keep the pasta slightly underdone before adding the cheese. For a thicker texture, simmer uncovered briefly after the cheese melts. For a looser sauce, stir in warm broth gradually. Handle the hot Dutch oven carefully during assembly. Customize with mushrooms, spinach, roasted garlic, thyme, rosemary, Swiss cheese, mozzarella, or a splash of white wine. For a vegetarian version, use vegetable broth and vegetarian Worcestershire sauce. Prepare the caramelized onions up to 3 days ahead and refrigerate them separately. Cook the pasta close to serving for the best texture. Freeze cooled leftovers in airtight portions for up to 2 months, although the sauce may separate slightly after thawing. Thaw overnight in the refrigerator and reheat gently with broth or cream. Store leftovers in the refrigerator for up to 3 days. Avoid repeated reheating because the pasta can soften and the cheese sauce can become grainy.
