  • 5 tbsp unsalted butter melted

  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 10 pieces chocolate sandwich cookies roughly chopped

Method
 

  1. Preheat the oven and line a baking pan with parchment paper.
  2. Mix crushed cookies and melted butter, then press firmly into the pan.
  3. Bake the crust briefly until set and allow it to cool slightly.
  4. Beat cream cheese and sugar until smooth. Add eggs and vanilla.
  5. Fold chopped cookies into the filling for extra crunch and texture.
  6. Spread filling over the crust and bake until the center is lightly set.
  7. Cool completely, chill until firm, then slice into bars and serve.

Notes

For a softer crust, reduce baking time slightly. For a crispier base, bake a few extra minutes. Freeze fully chilled bars in airtight layers for up to two months. Thaw overnight in the refrigerator before serving. Use a warm knife for clean slices during assembly. Customize flavors with peanut butter, mint extract, caramel drizzle, or white chocolate. Store covered in the refrigerator for up to five days.
