- Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and make sure the surface stays completely dry.
- Cut the cauliflower into evenly sized florets. Pat them thoroughly dry so the hot oven can roast rather than steam them.
- Add cauliflower, olive oil, garlic, smoked paprika, garlic powder, salt, and black pepper to a mixing bowl. Toss until every floret looks lightly coated.
- Spread the florets across the baking sheet in one layer. Leave space between pieces so hot air can circulate and create crisp edges.
- Roast for 20 minutes without disturbing the florets. Flip them with a spatula, then roast another 8 to 10 minutes until deeply golden.
- Sprinkle Parmesan over the hot cauliflower. Return the tray to the oven for 2 minutes so the cheese melts and lightly browns.
- Transfer the roasted cauliflower to a serving bowl. Add lemon juice, parsley, lemon zest, and red pepper flakes if using.
- Toss gently once and serve immediately. The florets should have crisp, caramelized edges while remaining tender inside.
Notes
For crisp roasted cauliflower, dry the florets thoroughly and avoid crowding the pan. For softer texture, cut the pieces larger and reduce the roasting time slightly. For extra browning, use a dark baking sheet and place the tray on the upper-middle oven rack. Add cumin, curry powder, Italian herbs, nutritional yeast, chili powder, or a little tahini for flavor variations. Keep florets in a single layer during assembly so they roast evenly. Prepare the seasoned raw cauliflower up to 12 hours ahead and refrigerate it covered, then roast directly from chilled with a few extra minutes. Freeze roasted leftovers in a freezer-safe container for up to 2 months, though the texture will soften after thawing. Reheat in a hot oven or air fryer to restore some crispness. Store leftovers in the refrigerator for up to 4 days. Avoid microwaving when crisp edges matter.
