- Drain the cauliflower thoroughly and let it steam-dry in the colander for several minutes. Excess water can thin the cheese sauce.
- Melt the butter in a medium saucepan over medium-low heat. Whisk in the flour and cook for 1 minute until smooth.
- Gradually whisk in the warm milk. Continue stirring for 3 to 5 minutes until the sauce thickens enough to coat the back of a spoon.
