baked cauliflower
Baked cauliflower makes vegetables feel like comfort food, which I fully support. I toss florets with olive oil, spices, and cheese, then let the oven work. My husband asks for seconds. My picky child actually eats some. Honestly, I’ll take this tiny dinner miracle and pretend I planned it perfectly.
This baked cauliflower turns simple florets tender inside and golden outside with garlic, paprika, and Parmesan. Roast everything on one tray for easy cleanup. Serve it alongside chicken, rice, curries, or salads. Add chili, herbs, lemon, or extra cheese to customize every batch without creating another complicated dinner any night.

Method
- Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly grease it.
- Cut the cauliflower into evenly sized florets. Pat them very dry so the oven roasts them instead of steaming them.
- Place the florets in a mixing bowl. Add olive oil, garlic, smoked paprika, garlic powder, salt, black pepper, and red pepper flakes.
- Toss thoroughly until every floret looks evenly coated. Keep the pieces intact so the finished cauliflower develops a tender center and browned edges.
- Arrange the cauliflower in one layer on the baking sheet. Leave space between pieces to encourage even browning and crisp edges.
- Bake for 20 minutes. Flip the florets with a spatula, then continue baking for 8 to 10 minutes until golden and tender.
- Sprinkle Parmesan over the hot cauliflower and bake for 2 more minutes, until the cheese melts and lightly browns.
- Remove the tray and let the cauliflower rest for 3 minutes. Drizzle with lemon juice and garnish with parsley and lemon zest.
- Transfer the cauliflower gently to a serving bowl and serve immediately while the edges remain golden and crisp.
