cauliflower soup
Cauliflower soup makes dinner feel cozy without demanding much effort. I simmer tender florets with onion, garlic, and creamy goodness. My husband asks for bread. My picky child studies the bowl suspiciously. I keep smiling anyway, because apparently vegetables need excellent public relations before anyone appreciates them at dinner tonight.
This cauliflower soup blends tender cauliflower, onion, garlic, broth, and cream into a comforting bowl. Roast the cauliflower first for deeper flavor, or simmer everything together for speed. Adjust the thickness easily. Serve it with crusty bread, herbs, or cheese when your family expects dinner to work overtime at home.

Method
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened and translucent.
- Add garlic and thyme. Stir for about 30 seconds until fragrant, taking care not to brown the garlic.
- Add cauliflower, potato, vegetable broth, salt, and black pepper. Stir well and bring the mixture to a gentle boil.
- Reduce the heat to low, cover partially, and simmer for 18 to 20 minutes until the cauliflower and potato become very tender.
- Remove the pot from the heat. Blend the soup with an immersion blender until smooth and creamy, or leave a few small pieces for texture.
- Stir in the heavy cream and Parmesan. Return the pot to low heat and warm gently for 2 to 3 minutes without boiling.
- Add lemon juice and taste the soup. Adjust salt, pepper, or lemon until the flavor tastes balanced and bright.
- If the soup feels too thick, add warm broth a little at a time. If it feels too thin, simmer uncovered until it reaches your preferred consistency.
- Ladle the hot soup into serving bowls. Garnish with parsley, chives, pumpkin seeds, Parmesan, or a small drizzle of olive oil.
- Serve immediately with crusty bread. The soup should feel silky and creamy, with enough body to coat the spoon but remain easy to ladle.
