  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (3 g) garlic powder
  • 1 teaspoon (3 g) smoked paprika
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (0.5 g) black pepper
Vegetables
  • 1 large (150 g) yellow onion — thinly sliced
  • 1 large (180 g) green bell pepper — thinly sliced
  • 1 large (180 g) red bell pepper — thinly sliced
  • 8 ounces (225 g) mushrooms — thinly sliced, optional

Method
 

  1. Slice the chicken into thin, even pieces. Pat it dry, then season with garlic powder, smoked paprika, salt, and black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning occasionally, until cooked through and lightly browned.
  3. Transfer the chicken to a plate and rest it briefly. Keep the skillet hot so the browned bits remain for the vegetables.
  4. Add the remaining olive oil, onion, green pepper, red pepper, and mushrooms if using. Cook for 6 to 8 minutes until tender with lightly caramelized edges.
  5. Season the vegetables with the remaining salt. For crisp-tender vegetables, cook until they still have a little bite; for softer vegetables, cook 2 minutes longer.
  6. Return the chicken to the skillet and toss with the vegetables. Cook for 1 to 2 minutes so the flavors combine and the filling becomes hot.
  7. Split the hoagie rolls lengthwise without cutting completely through. Spread the cut sides lightly with butter and toast them in a dry skillet or under the broiler until golden and crisp.
  8. Divide the hot chicken and vegetable mixture among the toasted rolls. Drape two provolone slices over each sandwich, keeping the filling evenly distributed.
  9. Place the assembled sandwiches on a baking sheet and broil for 1 to 2 minutes until the cheese melts and bubbles. Watch closely to prevent burning.

Notes

For juicy chicken, slice it evenly and avoid overcooking. For crisp-tender peppers, cook them until just softened with browned edges; for softer vegetables, extend cooking slightly. Toast the rolls before assembly so they resist the juicy filling and stay crisp longer. Handle the sandwiches carefully after broiling because the cheese and filling will be very hot.
