Ingredients

  • ¼ cup 50 g granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup 113 g unsalted butter, cold and cubed
  • cup 160 ml heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Strawberry Filling:
  • 3 cups fresh strawberries sliced
  • ¼ cup 50 g granulated sugar
For the Whipped Cream:
  • 1 cup 240 ml heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Combine flour, sugar, baking powder, and salt in bowl.
  3. Cut in cold butter using pastry cutter until crumbly.
  4. Whisk heavy cream, egg, and vanilla extract separately.
  5. Pour wet mixture into dry ingredients. Stir until dough forms.
  6. Pat dough into 1-inch thick circle. Cut into 6 rounds.
  7. Place rounds on baking sheet and bake 12–15 minutes until golden.
  8. Toss sliced strawberries with ¼ cup sugar. Let sit 10 minutes.
  9. Beat heavy whipping cream, powdered sugar, and vanilla until soft peaks form.
  10. Slice cooled biscuits in half. Layer strawberries and whipped cream between halves.
  11. Spoon extra cream and berries on top before serving.
