Ingredients
  

Macaroni and Vegetables
  • 2 cups (200 g) dry elbow macaroni
  • 1/2 cup (75 g) celery — finely diced
  • 1/2 cup (75 g) red bell pepper — finely diced

  • 2 tablespoons (15 g) fresh parsley — chopped

  • 1 tablespoon (15 g) yellow mustard

  • 2 tablespoons (30 ml) milk — for loosening, as needed

Method
 

  1. Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package directions until tender but still slightly firm.

  3. Whisk mayonnaise, vinegar, mustard, sugar, salt, and black pepper in a small bowl until smooth. Add milk gradually if the dressing needs a thinner texture.

Notes

Cook the macaroni only until tender because overcooked pasta can turn soft and mushy after chilling. For firmer texture, rinse the pasta well and chill it completely before adding dressing. For a creamier salad, add extra mayonnaise after refrigeration because pasta absorbs dressing as it rests. For more crunch, increase the celery, bell pepper, or carrots. Customize the flavor with chopped boiled eggs, peas, corn, cucumber, paprika, dill, or a little hot sauce. Do not freeze the finished salad because mayonnaise and vegetables can separate and lose their texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
