  • 1 tablespoon light corn syrup
  • 2 teaspoons pure vanilla extract
  • 2 ¼ cups 280 g all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup extra sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat 1 cup butter and 1 ¼ cups sugar until creamy.
  3. Add egg, corn syrup, and vanilla extract. Mix well.
  4. In separate bowl, whisk flour, baking soda, baking powder, and salt.
  5. Gradually combine dry ingredients into wet mixture.
  6. Scoop dough into 1 ½ tablespoon portions.
  7. Roll each ball in extra sugar lightly.
  8. Place dough balls onto prepared sheets evenly spaced.
  9. Bake 9–10 minutes until edges set and centers remain soft.
  10. Cool on baking sheet 5 minutes, then transfer to rack.
