- Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly grease it.
- Cut the cauliflower into evenly sized florets. Pat them very dry so the oven roasts them instead of steaming them.
- Place the florets in a mixing bowl. Add olive oil, garlic, smoked paprika, garlic powder, salt, black pepper, and red pepper flakes.
- Toss thoroughly until every floret looks evenly coated. Keep the pieces intact so the finished cauliflower develops a tender center and browned edges.
- Arrange the cauliflower in one layer on the baking sheet. Leave space between pieces to encourage even browning and crisp edges.
- Bake for 20 minutes. Flip the florets with a spatula, then continue baking for 8 to 10 minutes until golden and tender.
- Sprinkle Parmesan over the hot cauliflower and bake for 2 more minutes, until the cheese melts and lightly browns.
- Remove the tray and let the cauliflower rest for 3 minutes. Drizzle with lemon juice and garnish with parsley and lemon zest.
- Transfer the cauliflower gently to a serving bowl and serve immediately while the edges remain golden and crisp.
Notes
For tender cauliflower with crisp edges, dry the florets thoroughly and keep them in a single layer. For softer pieces, cut larger florets and reduce the final roasting time slightly. For extra-crispy edges, roast a few minutes longer until deeply golden, but watch the garlic closely. Handle the hot florets gently during assembly so the browned coating stays intact. Customize with cumin, curry powder, Italian seasoning, chili flakes, nutritional yeast, cheddar, feta, or a drizzle of tahini. Add lemon and fresh herbs immediately before serving for the brightest flavor. Prepare the seasoned cauliflower several hours ahead and refrigerate it covered, then roast when needed. Freeze cooled baked cauliflower in an airtight freezer-safe container for up to 2 months; thaw and reheat in a hot oven or air fryer for better texture. Store leftovers in the refrigerator for up to 4 days. Avoid microwaving when you want to preserve crisp edges.
